When Mark Singson appeared on Top Chef Canada, the Vancouver chef wowed judges by reinventing classic dishes in delicious new ways. Having grown up eating the cuisine of his Philippine heritage and worked at the city’s top restaurants, Singson attributes his culinary success to two factors: his mom’s influence and sourcing the best ingredients possible.
“My mom inspires my cooking,” Singson says. “I don’t take it for granted that there was always great food on the table; that’s where I pull all my flavours from.”
