Classic Ground Duck Pasta

Here’s your basic meat pasta sauce with a delicious twist: Ground Duck and Spicy Italian Sausage, creating a smooth and decadent dish with a perfect tinge of spice. While the recipe will work with any type of pasta noodle, we suggest using shell pasta. These tasty little shells get filled up with flavours as you mix in the sauce.

Ingredients

  • 0.5kg FVSP Lean Ground Duck
  • 500g Pack Mild/Spicy Savoury Sausage
  • 796ml Can diced tomatoes
  • 796ml Can tomato puree
  • 300ml Jar Tomato paste
  • 2 tbsp. Olive oil
  • 1 Large yellow onion diced
  • 2 Cup chopped mushrooms
  • 2-3 Garlic cloves minced
  • 1 tbsp. Brown sugar
  • 2/3 cup Italian seasoning
  • 1 tsp. Red pepper flakes
  • 2 Bay leaves
  • Salt & pepper to taste
  • Approx. 800g Conchiglie Pasta (or other pasta of choice)
  • 1 block parmesan (optional)

Preparation Instructions

  1. Begin thawing ground duck and sausage. This may take a few hours; alternately try submerging the packaged meat in warm water.
  2. Begin heating large saucepan on medium to medium-low. Drizzle olive oil around saucepan.
  3. Add diced onions and chopped mushrooms to saucepan. Cook until onions become slightly translucent, then add in minced garlic cloves.
  4. Remove sausage from casing. Add thawed italian sausage and ground duck into saucepan with onions, mushrooms, and garlic. Cook until brown.
  5. Once meat is browned, add in can of diced tomato, tomato puree and tomato paste. Stir together evenly. Sauce should be quite thick.
  6. Mix in brown sugar, all dry ingredients.
  7. After sauce is brought to a boil, lower to a simmer. Let simmer for 45 min to an hour.
  8. Bring a pot of water to a boil and cook pasta. Timing will very.
  9. Scoop pasta into a bowl and top with a generous amount of sauce, grate fresh parmesan over sauce, and serve.
