Smoked Duck Crostini with Raspberry Preserves

Instructions
Homemade Crostini
- Preheat oven to 350 degrees.
- Slice baguette at an angle into 1/4 inch thick pieces.
- Arrange baguette slices on baking sheets; brush both sides with oil, and season with salt.
- Bake, rotating sheets halfway through, until golden, 15-20 minutes. Allow to cool on baking sheets.
Smoked Duck Crostini
- Take smoked duck breast and cut with sharp knife into thin pieces. Once breast is sliced, remove skin by gently tugging it off.
- Spread freshly made crostini with raspberry preserves, place a slice of Smoked Duck Breast on top of preserves, and top with a sprig of thyme. There may be some crostini left over; just place into a sealed bag or container to use later.
- Arrange freshly made crostini on a nice platter and serve.
