Smoked Duck Crostini with Raspberry Preserves

Instructions

Homemade Crostini

  1. Preheat oven to 350 degrees.
  2. Slice baguette at an angle into 1/4 inch thick pieces.
  3. Arrange baguette slices on baking sheets; brush both sides with oil, and season with salt.
  4. Bake, rotating sheets halfway through, until golden, 15-20 minutes. Allow to cool on baking sheets.

Smoked Duck Crostini

  1. Take smoked duck breast and cut with sharp knife into thin pieces. Once breast is sliced, remove skin by gently tugging it off.
  2. Spread freshly made crostini with raspberry preserves, place a slice of Smoked Duck Breast on top of preserves, and top with a sprig of thyme. There may be some crostini left over; just place into a sealed bag or container to use later.
  3. Arrange freshly made crostini on a nice platter and serve.
